These are SO EASY: threw together some leftovers in a tortilla with salsa and toasted it in a pan   rotisserie chicken would be perfect in these too, and you could always skip the sweet potato for less carbs if that’s your thing. I think getting creative with leftovers is my new art form!


DA GOODS: took a leftover chicken breast I roasted with some red onions and chopped it up. Mixed in half a large mashed sweet potato, 1/2 cup green salsa and 1/3 cup grass fed cheese, then folded in almond flour tortillas (made 4). Crisped up in a pan on each side until the filling was warm.

I served with some more green salsa and a green salad, but guac or broccoli or any veggies you’d like would pair perfectly DEVOURED
