Whole30 Vegan Harvest Rice
All the best fall flavors in this harvest rice! Roasted sweet potatoes, crispy Brussels sprouts, crunchy pecans and dried cranberries — what’s not to love?


This cauliflower rice is loaded with tons of flavors and texture. It’s a great side dish, appetizer or the base of a delicious dinner. It would be a beautiful addition to your Thanksgiving dinner! Whole30, Vegan, Paleo, Gluten and Dairy Free!

2 cups Brussels sprouts, halved
1 large sweet potato, cut into 1 inch cubes
2 TBL Octonuts almond oil, divided
1 TBL balsamic vinegar
2 cups cauliflower rice
1/4 cup unsweetened dried cranberries
1/3 cup pecans
Directions:
Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
Add Brussels sprouts and sweet potatoes to a large mixing bowl.   In a small bowl, combine 1 TBL of the almond oil with balsamic vinegar.   Pour this mixture over veggies.   Toss together until veggies are covered in oil.
