Nut Butter Chocolate Oat Cups

You can use any nut butter to make these, here I used almond butter - I’ve also made these with peanut butter and cashew butter, both great options! Check out my delicious and easy recipe below. Hope you all enjoy these.
. Almond Butter Chocolate Oat Cups
1 cup Rolled Oat (I used GF)
1 cup Nut Butter (I used Almond Butter)
1/4 cup Honey (use less if you don’t want them sweet)
1/2 tsp Vanilla Extract
1/4 tsp Sea Salt
Optional: 2 scoops collagen or protein powder (I use vanilla)
Chocolate Topping
1/2 cup Chocolate Chips (I used dairy free chocolate chips)
1 tbsp Nut Butter.
Directions: Combine all the base ingredients in a bowl and combine. Line a muffin tin with cupcake liners and press 2 tbsp of the mixture into each cup. Place in the freezer while you make your chocolate topping. Combine the chocolate chips with 1 tbsp of nut butter and microwave in 20 second increments until fully melted. Let cool for 10 minutes. Remove the cups from the freezer and begin to pour the chocolate topping into each cup. Once finished, place these in the freezer for 1 hour. To store, keep these in the freezer or fridge! ENJOY
