Baked Zucchini Stacks

These Baked Zucchini Stacks are crispy cheesy on the outside and pillowy soft on the inside. Vegetables really comin thru!!! Make as a side, appetizer or finger food for the game this weekend.


Ingredients:
2 large zucchini, sliced thin
2 eggs beaten
3/4 cup grated parmesan cheese
1/3 cup flour
1/2 tsp garlic powder
1/2 tsp onion powder

Preparation:

Preheat oven to 400 F.
Line a baking sheet with parchment paper.
House your eggs in a bowl, your Parmesan in a separate dish and whisk together the flour and garlic powder and onion powder in a separate third bowl.
Dredge about 6 slices of zucchini in the egg (allowing excess to drip off), then the parmesan cheese and finally just coat the top and bottoms of the stacks in the flour mixture.
Place all stacks on baking sheet.
Bake for 35-45 minutes or until crispy and golden brown.
No there is no salt in this recipe.
Yields about 18 stacks.
